Cookbook author proves it's possible to make delicious -- and kosher -- Cuban cuisine

Author Genie Milgrom has published a kosher Cuban cookbook, 'Salsa! A Cuban Kosher Cookbook,' which teaches readers how to make authentic Cuban food according to kosher dietary laws. Milgrom, who was born into a devout Catholic family in Havana and later converted to Judaism, spent years adapting traditional Cuban recipes to be kosher-friendly. Her cookbook includes recipes for dishes such as seafood salad, paella, Cuban crab tamales, and shredded roast beef with bacon marinated in sour orange juice. Milgrom emphasizes that Cuban cuisine is distinct from other Caribbean cuisines, incorporating Spanish cooking with local Cuban flavors and using native tropical fruits and rum. She also includes a section on the history and significance of each dish in her family's history.
